I'd recommend a Canon S5IS, if you're after something that still is reasonably simple to use. It's still got a manual mode, has a hot shoe for external flash, and you can fit other lenses to it, but it's not an DSLR. It depends on how much you're going to really use all the settings on a DSLR, i guess.
