This is getting weird! I was driving home not that long ago, and the car was feeling pretty sluggish, and then suddenly all of this power kicked in and the engine ran so much better! Then about 10 minutes from home, it was back to how it was before with a real lack of power. Does anyone have any idea what would cause that?! I'm confused!

Check the earth connector on the top right hand side of the motor is tight.

I had this problem also from the intake pipe. Did you fully remove it and bend it and look at the underside? That's where the cracks seem to begin. As the engine heats up the cracks open and shut. If the o2 sensor is trying to fix it being too lean and nothing seems to help it'll go into save me mode.

Wouldn't have a clue with the coilpacks, I have only done 5000 Km's since I got the car.

I did have to pull the earth off the put my strut brace on, so that would make sense! Ill have a look.

The intake pipe looked fine when I pulled it off, but I might just wrap the corragations with tape and see if it changes anything!

Not the main battery earth near the strut brace. But check, clean and tighten that anyway.

There is a white plug with about 6 black wires coming into it that is bolted on the head near the oil cap. These are the grounds for the coil packs amongst other things. Check, clean and tighten.

Okay, so I cleaned the earth you talked about and the car was probably running a bit better, but it's still way down on power. I've pulled the intake pipe out and had another look and it's seems okay, but I'm replacing it now anyway! Hopefully that's the issue.

It is often the problem.
Glad it was an easy fix
